Properly storing tofu not only extends its shelf life and reduces food waste but also ensures food safety and hygiene. Spoiled tofu can produce toxins that are harmful to health, leading to digestive problems such as stomach pain, diarrhea, and nausea.

There are many ways to preserve tofu, depending on how long you want to keep it and how you intend to use it. Below are some common and effective methods.

Quick view:
  • 1. Store tofu within the day (no refrigeration needed).
  • 2. Store tofu in the refrigerator.
  • 3. Store tofu in the freezer.
  • 4. Preserving fried tofu
1. Store tofu within the day (no refrigeration needed).

If you don't have a refrigerator but still want to keep tofu fresh for the day, simply soak it in clean water with about half a teaspoon of salt. This salt water helps inhibit bacterial growth and keeps the tofu fresh for longer. However, this method is only suitable for short-term preservation, so use up the soaked tofu within the day to ensure the best quality.

2. Store tofu in the refrigerator.

With just a few simple steps, you can keep tofu for up to a week.

Step 1: Bring a pot of water to a boil, then gently add the tofu and blanch for about 2-3 minutes over medium heat. Note: Arrange the tofu in a single layer; do not let the pieces overlap while blanching as this can easily cause the tofu to break apart.

Step 2: Once blanched, use a slotted spoon to remove each piece of tofu and gently place it in a food container. Then, pour cold water over the tofu until it is completely submerged, and add half a teaspoon of salt to help the tofu retain its firmness longer.

Step 3: Seal the container tightly and place it in the refrigerator. Change the water in the container once a day to keep the beans fresh.

3. Store tofu in the freezer.

After buying tofu, rinse it quickly under clean running water, then cut it crosswise into bite-sized pieces.

Next, arrange the tofu pieces in a food container, pour in enough water to completely cover the tofu, and close the lid tightly.

Place the container in the freezer. This method helps to preserve the tofu for 1 to 3 months.

When you need to cook, simply take the tofu out to thaw, drain the water, and you can use it like regular tofu.

4. Preserving fried tofu

Refrigerator : To keep fried tofu in the refrigerator, simply place it in an airtight food container and put it in the refrigerator. This way, the tofu can be used for several days.

Freezer : For longer storage, let the fried tofu cool completely, then place it in a zip-lock bag or container and freeze. When ready to use, simply thaw it. This freezing method helps the tofu retain almost its original quality and nutritional value.

If consuming within the day : Re-fry over medium heat until the crust is light golden brown, then remove and place on a plate lined with paper towels to drain excess oil.

Above are four simple ways to preserve tofu, from soaking it in salt water for daily use, blanching it briefly to keep it fresh for a week in the refrigerator, to freezing it for months.
